Banana Bread Brekkie Bars

Made from wholegrains, naturally sweetened and packed with protein and healthy fats, this Banana Bread Brekkie Bar is the perfect go-to breakfast when you’re in a rush!

Makes: 1 mini loaf

Ingredients

  • 1/4 cup buckwheat flour
  • 2 tbsp vanilla protein powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp ground cinnamon
  • 1 tsp melted coconut oil
  • 1/4 cup mashed banana
  • Handful of chopped walnuts and dried fruits

Toppings

Method

  1. Preheat the oven to 175C
  2. Place all ingredients into a bowl and mix well
  3. Pour the batter into a lined/sprayed mini loaf pan
  4. Smooth top of batter and sprinkle on muesli, cinnamon and coconut sugar
  5. Bake for 10-14 minutes or until a toothpick is inserted into the centre comes out clean

Store in an air-tight container for up to 5 days or slice up and freeze.
