Recipe: Roasted Pumpkin & Feta Salad

  • 200g smooth feta1kg Butternut pumpkin – remove skin and cut into large squares
  • 3 garlic cloves
  • ¼ bunch Italian parsley
  • ½ bunch coriander
  • 200g macadamia nuts 
  • Brookfarm Premium Grade Macadamia Oil
  • Sea salt to taste


  • Heat a large non-stick fry pan – add some Brookfarm Macadamia nut oil – add the pumpkin, garlic cloves and season – toss the pumpkin in the oil and seasoning to thoroughly coat the pumpkin – allow to cook evenly on all sides until golden – set aside to cool
  • Place the cooked pumpkin and garlic in a serving bowl – dollop the feta evenly over the pumpkin – scatter over the parsley, coriander and macadamia nuts – then drizzle with Brookfarm Premium Grade Macadamia Oil
