Ingredients
- 4 ½ cups Brookfarm Macadamia & Cranberry Toasted Muesli
- ½ cup almond butter
- ¼ cup honey
- 25g butter
- 1 tsp vanilla essence
- Pinch of salt
Method
- Place the toasted muesli into a large mixing bowl.
- Add the almond butter, honey, butter, vanilla essence and salt to a small saucepan. Heat over medium heat, stirring, for 2–3 minutes or until the butter has melted and the mixture is smooth and combined.
- Pour the warm mixture into the bowl with the muesli and mix well using a rubber spatula until evenly coated.
- Line a 20cm x 25cm rectangular or square tray with baking paper. Spoon the mixture into the tray and spread evenly, then place another sheet of baking paper on top.
- Flatten the muesli mixture with your hands until firm and even.
- Sprinkle over the garnish ingredients, if using, then press again with the baking paper so they stick to the mixture.
- Place in the fridge and let set for 1 ½ hours or until firm.
- Remove from the tray and place on a chopping board. Cut into equal rectangular bars and enjoy chilled or at room temperature.
