Ingredients
-½ cup Toasted Muesli Macadamia Cranberry
- 1 cup raw cashews
- 3 tsp ceremonial grade matcha powder
- ½ cup pitted dates
- ¼ cup coconut milk
- 2 tbsp coconut oil
- ¼ cup desiccated or shredded coconut for coating
Method
- Add toasted muesli and cashews to a food processor and blitz to form a crumb, then add matcha, dates, coconut milk and coconut oil and blitz until uniform in texture.
- Scoop into a bowl and refrigerate for 30 minutes. Measure 1.5-2 tbsp portions, roll into a ball and then roll through desiccated coconut.
- Repeat with the remaining mixture. Ideally, set in fridge for another 3-4 hours before serving.
- Eat and store in fridge for up to 2 weeks.
