Ingredients

  • 500g strawberries, cut into quarters
  • 1/3 cup sugar
  • ½ lemon zest and juice 
  • 4 cups muesli
  • 330g coconut yoghurt 

Method

  • Place the strawberries into a saucepan, add the sugar, lemon zest and the juice.
  • Stir though and bring to the boil. Turn down to medium heat and simmer for 10-15minutes until the strawberries are soft and syrupy.
  • Remove from the pan and place them into a shallow bowl. Put the bowl in the freezer for 10-15 minutes until cold or at room temperature.
  • Serve Brookfarm muesli with coconut yoghurt and strawberry compote.
