Ingredients
- 500g strawberries, cut into quarters
- 1/3 cup sugar
- ½ lemon zest and juice
- 4 cups muesli
- 330g coconut yoghurt
Method
- Place the strawberries into a saucepan, add the sugar, lemon zest and the juice.
- Stir though and bring to the boil. Turn down to medium heat and simmer for 10-15minutes until the strawberries are soft and syrupy.
- Remove from the pan and place them into a shallow bowl. Put the bowl in the freezer for 10-15 minutes until cold or at room temperature.
- Serve Brookfarm muesli with coconut yoghurt and strawberry compote.
