There’s something special about slow mornings and warm bowls of porridge. This recipe, created by Justine Schofield for Everyday Gourmet, takes comfort food to the next level with tender roasted apples and a drizzle of maple pan juices.
We’ve paired our creamy Gluten Free Porridge with Jazz or Pink Lady apples, roasted to golden perfection in olive oil, maple syrup, cinnamon, and a touch of cornflour to thicken those sticky, delicious juices. Topped with our Roasted Nuts Maple & Pink Lake Salt, it’s a nourishing breakfast that’s both wholesome and indulgent.

Ingredients
-⅔ cup Gluten free Porridge
-1 cup milk
-1 handful of Roasted Nuts Maple & pink lake salt, chopped
-Roasted apples
-3 Jazz or Pink Lady apples, skin on and cut into wedges
-1 tbsp olive oil
-½ cup pure maple syrup
-1 tbsp corn flour
-½ tsp cinnamon
Method
- Preheat the oven to 180°C. Place all of the roasted apple ingredients into a baking dish and toss everything together until the apples are well coated.
- Roast in the oven for 30 minutes, stirring every 10-15 to ensure they cook and colour evenly and the apples are tender.
- Cook porridge as per packet instructions.
- Serve porridge with a generous serving of roasted and a drizzle of pan juices. Garnish with chopped nuts.
