Powerfood with smoked salmon & corn by Sam Gowing

Ingredients:

Serves 1

100 grams smoked salmon

¼ cup cooked corn kernels

¼ cup watercress

20 grams / 1 tablespoon Brookfarm Powerfood

1 teaspoon Brookfarm macadamia oil

¼ lime wedge

Method:

  • Layer smoked salmon on a serving plate.
  • In a small bowl toss corn kernels with watercress.
  • Top on to smoked salmon, add Powerfood and a squeeze of lime.

 

Serving suggestions: a slice of toasted sourdough, a poached egg
