Made from wholegrains, naturally sweetened and packed with protein and healthy fats, this Banana Bread Brekky Bar is the perfect go-to breakfast when you're in a rush!

Ingredients

1/4 cup buckwheat flour

2 tbsp vanilla protein powder

1/2 tsp baking powder

1/4 tsp salt

1 tbsp ground cinnamon

1 tsp melted coconut oil

1/4 cup mashed banana

Handful of chopped walnuts and dried fruits

Toppings

Handful of Toasted Macadamia Muesli with Cranberry

Sprinkle of cinnamon

Sprinkle of coconut Sugar

Method

  • Preheat the oven to 175C
  • Place all ingredients into a bowl and mix well
  • Pour the batter into a lined/sprayed mini loaf pan
  • Smooth top of batter and sprinkle on muesli, cinnamon and coconut sugar
  • Bake for 10-14 minutes or until a toothpick is inserted into the centre comes out clean
  • Store in an air-tight container for up to 5 days or slice up and freeze.
