This light and refreshing smoked salmon and corn salad is beautifully topped off with the crunchy of our Keto Paleo Granola. For true keto omit the corn for a keto friendly vegetable like fresh cucumber or roasted asparagus, broccoli or cauliflower.

100 grams smoked salmon
¼ cup cooked corn kernels (For true keto omit the corn for a keto friendly vegetable like fresh cucumber or roasted asparagus, broccoli or cauliflower.)
¼ cup watercress
1 tablespoon Keto Paleo Granola
1 teaspoon Premium Macadamia Oil
¼ lime wedge
Method
- Layer smoked salmon on a serving plate.
- In a small bowl toss corn kernels (or keto friendly vegetable) with watercress.
- Top on to smoked salmon, add Keto Paleo Granola and a squeeze of lime.
- * Optional keto: Serve a poached egg * Optional non-keto: Serve with a slice of toasted sourdough
